Scenario
Brewers’ spent grain (BSG in English) is the most abundant by-product generated in the brewing process; in fact, about 35-40 kg of it is produced for every 100 liters of beverage. This material consists of barley grain husks obtained as a solid residue after wort production. BSG is rich in fiber and protein and, until now, the main use for disposal of this by-product has been as animal feed. However, because of its nutritional content, BSG arouses interest in the application and improvement of human food products, particularly in view of its low cost and availability in large quantities.
Description
Upcycled Foods, Inc. is a U.S.-based company that focuses on the upcycled food economy. The company offers innovative business-to-business ingredients and services, including developing upcycled food products and providing versatile upcycled ingredients.
Their flagship product ReGrained SuperGrain® is a powder made from the “residue” of brewery grains. It is versatile, inexpensive and environmentally friendly, rich in plant protein, dietary fiber and prebiotics. It can be used as an alternative to flour in baked goods, snacks, extrusions, coatings, sauces, beverages and many other commercial applications to deliver nutritional and sustainability innovations demanded by customers.
ReGrained SuperGrain® has a naturally nutty, toasted flavor and can be used with other ingredients, both sweet and savory. It also provides at least 3.5 times the dietary fiber and twice as much plant protein as whole-wheat and white flours by the same weight, with nearly 90 percent fewer net carbohydrates than a conventional all-purpose flour. ReGrained SuperGrain® also ranks among the lowest emitters ofCO2 compared to popular alternative functional flours such as pea protein, inulin, almond flour, and others.
