Scenario
In 2024-2025, the Italian dairy sector is under pressure: cow’s milk production is growing (an estimated 13.1 million tons in 2024) while the industry’s turnover reaches about 19 billion euros, employing more than 100,000 people. Exports are soaring (nearly +12% in dairy products and cheese from January-August 2024) but the domestic market in certain segments shows signs of stagnation.
The main challenges are many: how to reduce emissions throughout the supply chain (livestock impact, wastewater management, water and soil consumption), how to limit food waste (at the production, distribution, and household stages), how to ensure transparency for consumers who demand sustainable products, animal welfare, and controlled origin.
Description
In this context, La Maremmana stands as a practical model. In the heart of the Tuscan Maremma, in Principina Terra, the farm and dairy combinesbuffalo farming with artisanal and sustainable dairy production. The buffalo are raised in loose housing and fed on forages and grains grown in-house according to regenerative practices, including sowing on sod, which protects soil fertility and limits erosion. Livestock manure is enhanced in a biogas plant, producing renewable energy and contributing to a circular economy model.
The heart of the farm is the “Inno al Sole” dairy, housed in a 19th-century farmhouse that integrates tradition and modernity. Through large windows, visitors can observe the transformation of fresh buffalo milk into specialties such as mozzarella, burrata, stracciatella, yogurt and caciocavallo. The farm store strengthens the direct link between producer and consumer, guaranteeing freshness and quality.
The company’s philosophy is expressed in the claim “Short chain, happy buffaloes and quality cheese,” which translates into respect for animals, conscious use of natural resources and an authentic experience for the public. In addition to producing excellent cheeses, La Maremmana collaborates with local entities, participates in responsible distribution networks such as Cortilia and Valsana, and promotes innovative farming practices. Thanks to this combination of hospitality, innovation and social responsibility, it represents a benchmark reality in Tuscany and a replicable example of ethical and sustainable agriculture.
