“Good morning Calabria” is a podcast that highlights the region from various perspectives, in this episode in particular extolling its sustainable gastronomy. It highlights the fact that it is possible to have zero-mile excellence but also to be anexcellence in agribusiness export.
Three witnesses are Filippo Cogliandro, chef of L’Accademia Gourmet, Pietro Sirianni, director of Coldiretti Reggio Calabria, and Katia Macheda, president of the agricultural cooperative “Comunità di Sant’Arsenio.”
Cogliandro explains how it is possible to make haute cuisine from typical Calabrian products, supporting thelocal economy. Availability is certainly more limited, and he specifies that the term “kilometer 0” does not mean a cancellation of transportation costs, but rather sometimes the product can be more expensive because it is artisanal. His goal is to not only perform traditional preparations but also to combine products from other places with territorial ones.
Instead, Sirianni focuses on Calabria’s main advantage, again speaking of gastronomy:exclusivity. One example is bergamot, which is mainly produced in this region and has become a very common ingredient in recent years. This factor, in fact, is the motive behind food and wine tourism in Calabria.
Macheda concludes by saying that in this regard, the region is also developing projects in schools to spread the concepts of sustainable gastronomy and zero-kilometer excellence and has started an environmental education and training program.
