The current economic-political-social framework proposed by European, national and regional sustainable development goals and programs has created the need to investigate some aspects of Piedmont’s regional strategy, paying particular attention to circular economy issues applied to the food system. In this context, research developed by the University of Gastronomic Sciences of Pollenzo (UNISG) through the Laboratory of Sustainability and Circular Economy focused on the analysis of five food chains considered strategic for the identity of the Piedmont region: Wine, Milk and Cheese, Rice, Mineral Water and Beef.
Structured in three phases, understanding the current state, mapping possible solutions, and proposing public policies to incentivize paradigm change, the development of the project involved the participation of numerous stakeholders – 21 Piedmont enterprises, 3 Innovation Poles, 111 people among food system workers along the entire supply chain – as one of the main forms of information gathering and hypothesis validation.
The report contains the results of the various stages of research for each of the supply chains by reporting, throughout the paper, considerations that aim to help ground the Regional Sustainable Development Strategy and position Piedmont as a national and international benchmark for the Circular Economy for Food.
