Scenario
Today, the agribusiness system is recognized as a major contributor to global environmental crises. About 34 percent of greenhouse gas emissions are related to food production, processing and distribution, while more than a third of what is produced never reaches consumption and ends up wasted.
Added to this is theimpact of intensive agriculture, which puts pressure on ecosystems and biodiversity. However, in this scenario, which appears critical and unsustainable, new models are emerging that are capable of proposing an alternative: approaches that focus on cyclicality, the regeneration of soils and communities, the reduction of waste, and the rediscovery of relationships between all actors in the supply chain.
Description
It is in this context that Baldío was born, in Mexico City. It is not just a restaurant, but a true laboratory of regenerative culture. Here the philosophy is radical: there are no garbage cans. Every waste finds a new use through
The ingredients come largely from the chinampas of Xochimilco, ancient agricultural islands cultivated using ancestral methods and supported by the collaboration with Arca Tierra. From these fertile soils come vegetables, corn, herbs and grains that make up a constantly evolving menu, capable of following the rhythm of the seasons and enhancing local biodiversity.
The dining experience reflects this philosophy: from yellow corn tamales with fermented sauces to grilled onions with chapulines and hibiscus dressing to desserts that reinterpret local fruits such as mangoes and bananas. Each dish becomes a narrative of tradition, innovation, and circularity.
The project received the Michelin Green Star, an award that consecrates Baldío as an international benchmark. Here, luxury is no longer synonymous with abundance, but with care, responsibility and connection to the land.
Baldío shows that circularity is not a utopia: it can become a reality even in haute cuisine, generating a new narrative of food based on interdependence, regeneration, and nonlinearity of systems. It is a bridge between past and future, capable of uniting age-old agricultural practices and innovative visions for a more sustainable food model.
